- The Windrem Vineyard sits atop alluvial deposits of soils eroded over the millennia from the surrounding hills and mountains that comprise the northern portion of the Mayacamas Range. At an altitude of 1,360 feet, the vineyard lies about 2 miles south of Clear Lake and about 1 mile west of Mt. Konocti, a dormant volcano that towers above the entire region.

-Long slow cool fermentation in stainless steel for 60 days, kept at cold temperature to avoid malolactic fermentation. Our first year certified by CCOF organic certifiers for wines made with organic grapes. Ultra low sulfite additions to meet organic certification standards.
- Rich and ripe Sauvignon Blanc profile with passionfruit and coconut tropical notes with just a hint of the classic vegetal characters green pepper and hay. The mouthfeel is first rich with lemon curd flavor then rolls into its natural acidity and delivers a dry finish with final note of fresh green almonds.
- Oysters on the half shell. Sable fish with braised leeks and fennel. Tiger prawn and swordfish ceviche.
