Wine ProfileThis Syrah has a rich nose, filled with the smells sweet of pomegranate, candied plums, and dried fruit. A pinch of black pepper on the nose makes a promise that is fulfilled with pink peppercorn on the tongue, the subtle aromatic spice becoming punchy on the palate. Overall, this is a jammy wine with fruit flavors of plum and pomegranate, yielding to a mellow finish with a lingering tannin and leathery mouthfeel.
This wine will pair well with grilled mushrooms and vegetables, or aged hard cheeses. For the carnivore, we suggest intrinsically strong flavored meats, such as duck tacos or roast lamb.
Alder Springs is located in the cool Mendocino Valley above Sonoma in Northern California. The vineyard is a series of rolling hills and steep inclines at high altitude touching the eastern edge of the Coastal Range.
This hand-picked fruit undergoes 18 days of maceration in a open-top stainless steel fermenter, including 4 days of cold soak and 14 days of alcoholic fermentation. Punch downs are performed three times per day during the maceration to gain a perfect extraction of all aromatics compounds. Full malolactic fermentation is done with aging in neutral French oak barrels to create a beautiful and opulent structure.
