The first nose of this delicious Sauvignon Blanc from Lake County, CA evolves towards citrus aromas with a hint of flint. The palate as a full concentration and texture, reflecting a perfect ripeness of the 2 vineyards (Windrem and Rooster). Minerality then takes place for a bright, fresh and balanced finish.

Vineyard Description:

A blend of 30% from Windrem Vineyard and 70% from Rooster Vineyard. Those are nestled about 2 miles south of Clear Lake and about 1 mile west of Mt. Konocti, a dormant volcano that towers above the entire region.
Those vineyards sits atop alluvial deposits of soils eroded over the millennia from the surrounding hills and mountains that comprise the northern portion of the Mayacamas Range at an altitude of 1,360 feet. Every elements are perfect for growing a beautiful balance Sauvignon Blanc with a good maturation and minerality.

Winemaking Info:

Harvest was followed by a very gentle press, keeping just juice from the heart of the cycle. Then a long fermentation of 50 to 60 days in 2 separate stainless steel tank at a cool temperature.

Our Approach

Step 1
Grapes
We contract carefully selected vineyards to supply grapes. Prior to harvest we choose our preferred varietals and make shipping arrangements.
Step 2
Crush and Maceration
Grapes are inspected upon arrival and if approved, de stemmed, sorted, and finally crushed.
Step 3
Aging
After fermentation the wine is barreled into the cellar to begin aging per the winemakers design. Typical aging is 6-10 months but options exist for aging up to 24 months.
Step 4
Blending
After the wine has aged to its optimal condition, our winemakers further refine the wine by blending it with other wines if desired.
Step 6
Labeling
The finished wine is hand bottled, corked, and labeled.
Step 6
