Wine Profile

Our 2019 Cab Sauv, vinted and bottled in house, makes a great fall and winter wine. Reminiscent of grandma’s cookies and spiked hot cocoa, this wine lifts your spirits with aromas of Kirsch cherry liquor and baking spices. Medium-bodied, NYC Cab goes down easy, finishing with some light oak and tobacco flavors, with firm tannin and a light vanilla finish.

We can ship to all states except AL, AR, KY, MI, MS, SD, UT.

About the Vineyard

Sagemoor Vineyard has a stunning view to the southwest overlooking the mighty Columbia River and the Rattlesnake Mountains. The southwestern sloping land with elevation ranging from 400-860 feet provides ideal conditions for both grapes and tree fruit. Sagemoor’s soils for grape growing are comprised mostly of: Quincy loamy fine sand 0-15% slope and Sagehill very fine sandy loam 2-10% slope. Today Sagemoore Vineyard supplies grapes to 25 Washington wineries.

Wine Making Process

Twenty-eight day maceration in tank with pumping over three times a day. Free run was kept separate from pressed wine. Full malolactic fermentation. Aged in both large French oak tanks and French oak barrels for 12 months. The Cab Sauv was then blended with 2019 Petite Sirah, 2019 Syrah, 2019 Cab Sauv Obsidian, 2019 Merlot, 2019 Cab Franc for a master blend.

Recommended Pairings

Pairs well with grilled ribeye, spare ribs, charred broccoli, and aged gouda.

How City Winery Makes Wine

Step 1
Grapes
We contract carefully selected vineyards to supply grapes. Prior to harvest we choose our preferred varietals and make shipping arrangements.
Step 2
Crush and Maceration
Grapes are inspected upon arrival and if approved, de stemmed, sorted, and finally crushed.
Step 3
Aging
After fermentation the wine is barreled into the cellar to begin aging per the winemakers design. Typical aging is 6-10 months but options exist for aging up to 24 months.
Step 4
Blending
After the wine has aged to its optimal condition, our winemakers further refine the wine by blending it with other wines if desired.
Step 6
Labeling
The finished wine is hand bottled, corked, and labeled.
Step 6
The Result
A carefully crafted wine made with grapes from the best vineyards and produced locally. Indulge.
